We began distilling in August, 2005 (as soon as the local, organic peach harvest had begun). We started out making eaux de vie from locally grown, organic peaches, pears, cherries & apples. We also released some small batch grappas distilled from Chardonnay, Pinot noir & Riesling organically grown at Jack Rabbit Hill. The response was really strong so we expanded production in 2006 and, in 2007, introduced CapRock organic vodka and CapRock organic gin.
The key to Peak Spirits? Some of the most flavorful, cleanest seed and stone fruits on the planet all grown within 20 miles of the Peak Spirits distillery, the purest, softest untreated mountain water sourced 20 miles from the distillery, and some good tastebuds. These are the most important ingredients in a premium spirit, and they’re right on our doorstep.
Picked at peak ripeness in nearby orchards the fruit spends little time in transit. At the distillery the fruit is slowly fermented in chilled stainless tanks, distilled in a copper-pot still in 150L batches (those are very small batches), and cut back to bottle strength with CapRock™ private-sourced mountain water. All products are 100% USDA-certified organic.

CapRock™ Organic Vodka is a straight vodka made with premium grapes grown at Jack Rabbit Hill, fermented and distilled on the skins. Clean and round with a satin-smooth finish. Available in 750ML. 40% alc.
CapRock™ Organic Dry Gin celebrates the bounty of the American southwest. A special blend of high-desert fruits, blossoms & spices infused in an organic apple distillate. Available in 750ML. 41% alc.
Peak Peach and Peak Pear Aperitifs are aperitif brandies that make a perfect cocktail over ice. A great way to wake up the tastebuds for a fine meal. We don’t add sugar or other sweetener so it’s not as sweet as a liqueur. We just take our organic peach, pear or apple eau and blend it with juice of the same fruit and vintage for a nice, light spirit at 18% alc. Available in 375 ML.
Peak Organic Eaux de Vie are made with locally grown, whole-fermented mashes of rosa & cresthaven peaches, green bartlett pears, montmorrency cherries & braeburn & jonathan apples. Nothing captures the pure essence of superior fruit like a well made, unoaked eau de vie. Available in 375ML and 200ML. 40% alc.
Peak Organic Estate Grappa, like the finest from Italy, are distilled from dripping-wet, soft-pressed pomaces of organic Pinot noir, Chardonnay, and Riesling grown at Jack Rabbit Hill. We don’t “stretch” the pomace by adding water & sugar and refermenting. Just the original pomace is distilled to capture the concentrated aromas and smooth finish that characterize great grappa. Available in 200ML. 40% alc.
