Peak Organic and Biodynamic Estate Grappa, like the finest from Italy, are distilled from fresh, dripping-wet, soft-pressed pomaces of organic Pinot noir, Chardonnay, and Riesling grown at Jack Rabbit Hill. We don’t “stretch” the pomace by adding water & sugar and refermenting. Just the original pomace is distilled to capture the concentrated aromas and smooth finish that characterize great grappa.
