"Eau de vie" means literally "water of life" in  French, and it's the french expression for any distilled spirit. In the US it's the name for a category of dry, aromatic fruit brandy very popular in Europe, and generating interest in the US thanks to the artisan food and classic cocktail movements. Nothing captures the pure essence of superior fruit like a well made, unoaked eau de vie.

 

Organic Pear Eau de Vie is distilled from whole mashes of Green Bartlett pears organically grown by Ela Family Farms 6 miles down the road. Bright white fruit aromas, with a long, textured finish. You can taste the skins. 40% alc. 375ML and 200ML.

 

Organic Peach Eau de Vie is distilled from whole mashes of Rosa and Cresthaven peaches organically grown by Ela Family Farms and Gunnison River Farms. Citrussy peach aromas with almond nutty flavors from the stone of the fruit. 40% alc. 375ML and 200ML.

 

Peak's Organic Eaux de Vie are made with locally grown, whole-fermented mashes of rosa & cresthaven peaches, green bartlett pears, montmorrency cherries & braeburn & jonathan apples. Peak sources its fruit from 5 growers including Peak founder Jack Rabbit Hill and partner Gunnison River Farms. Compact in size and dense in flavor, our fruit is always super expressive with concentrated aromas and flavors because of the way it's farmed; we don't use synthetic fertilizers or heavy irrigation!

 

In the cellar, whole fruit (skins, seeds, stones, pulp, and juice) are hand-loaded from 20-lb bushel cartons into closed vats at peak ripeness, and fermented around 55°F for several weeks. Slow, cool ferments preserve the delicate aromas and flavors. Whole fruit mashes (skins, seeds, stones) produce more complexity and balance in the distillate. But whole fruit ferments also mean we absolutely have to start with PRISTENE fruit, no split pits, mold, pecks, rot, etc. NO WINDFALLS! In a copper pot baine marie (steam-heated) still, the whole fruit mashes are boiled at low steam pressure to produce about 10L/run of premium eau distillate. The distillate is then cut back to 80proof with naturally pure and soft water from the CapRock source, 20 miles from the distillery.

 

No additives, no perfumes, no oils, no sugar, no acid at all in these products, jus whole fruit and CapRock water. vailable in 375ML and 200ML. 40% alc.
