Colorado’s Peak Spirits® releases 1st certified organic gin made in the US
Hotchkiss, CO - October 11, 2007 - On the heals of it's CapRockTM organic grape vodka release in July,
Peak Spirits® is rolling out its CapRockTM Organic Dry GIn. CapRockTM is the 1st USDA-certified organic
gin distilled in the United States.
CapRockTM Organic Dry Gin is a unique blend of 9 herbs, fruits, flowers & spices, all infused in a base
spirit made with organic apples grown in local orchards. In addition to fresh, locally farmed produce,
unprocessed mountain water drawn from Peak’s private source is also used in the small-batch distillation
process. The result is a bright gin with a silky-smooth, long finish. “Peak is really setting the standard for
premium spirits in the Roaring Fork Valley. At Six89 and Phat Thai, we continue to provide our customers

CapRockTM Organic Dry Gin is packaged in a 750ml bottle, 82 proof, SRP $32, and is available at fine
restaurants and stores in Colorado as well as from the distillery directly. The name “CapRock” refers to the
high mesa lava rock formation 20 miles from the distillery where Peak Spirits sources unprocessed, naturally
pure water for its distillation process.
Peak Spirits® is a craft distillery located on Jack Rabbit Hill in Colorado's North Fork Valley, a community well
known for it’s organic farms and ranches. Founded in 2004, the distillery is a partnership between 3 local,
family-owned organic food producers: Jack Rabbit Hill Estate Winery, Big B’s Fabulous Juices, and Gunnison
River Farms. The distillery makes premium organic gin, vodka and brandies, all from locally-grown organic fruits
and unprocessed CapRockTM water.
